- 1 teaspoon turmeric powder
- 2 cups vegetable stock
- 1 cup diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced tomatoes
- 1 cup cooked chickpeas
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions:
1. Heat the oil in a large pot over medium heat. Add the onion and sauté for 5 minutes, until softened. Add the garlic, ginger, cumin, coriander, red chili powder, and turmeric and sauté for 1 minute.
2. Add the vegetable stock and bring to a boil. Add the potatoes, carrots, celery, tomatoes, and chickpeas. Reduce the heat to a simmer and cook for 15 minutes, or until the vegetables are tender.
3. Season with salt and pepper to taste and garnish with fresh cilantro if desired. Serve hot.
Tips:
